The Le Grotte di Sileno estate covers 60 acres
on an archaeological site occupied
through the centuries by the Peucetii,
the Greeks, the Romans and, more recently,
the Normans and the Benedictine monks.
As the discovery of ancient wine cellars
and the extraordinary millennium-old
olive treesthat grow here bear witness,
wine and olive oil have always been
produced in this area of Apulia.
These traditions have been
nurtured with passion
through the ages by local landowners who
recognise the importance of constant research
into organic growing techniques
and the parsimonious use of water resources.
